Growing up, there was always popcorn. Having tried different recipes and popping apparatus over a span of 18 years, I believe that I have perfected the most delicious popcorn you will ever have. And here’s the kicker: IT’S HEALTHY!
Before I share this simple recipe with you, let me go over some of the benefits of the superfood ingredients.
Spirulina: This blue-green algae is full of a little bit (and sometimes a lotta bit) of everything. It has chlorophyll, protein, vitamins, minerals, fatty acids, nucleic acids, polysaccharides and antioxidants. Spirulina contains the highest concentration of protein found in any food at 65-71%!
Hempseed: Hempseeds are easily digestible by humans. They contain amino acids, protein, omega-3 and omega-6 fatty acids, Vitamin E, minerals and chlorophyll. They are serious brain builders and liver supporters.
Coconut Oil: If you’re not using coconut oil for cooking, it’s time to start. It is one of the few oils that will not go rancid when brought up to high heat. It is antiviral, antifungal and antimicrobial. Coconut oil will help with the absorption of fat-soluble vitamins & amino acids while helping with digestion.
Combined, these ingredients will help your body to stay stronger than you’ve ever experienced. They will help promote your nervous system, build endurance, balance your blood sugar and metabolism, promote neurological health, build strong bones and promote rapid healing. They are anti-inflammatory, immune system boosters and antioxidants that will naturally help balance and strengthen your body.
On medium heat, melt the coconut oil in a medium sized pot with 3 kernels of corn. With the lid on, listen until you hear all three kernels pop. Add more corn until there is a single layer covering the bottom of the pot. Place the lid back on and let those kernels do their thing.
Meanwhile, melt the ghee on the stovetop on medium-low heat. Once melted, remove from heat immediately. In a blender or food processer, ad the hempseeds, spirulina and sea salt. Pulse to mix and break down the hempseeds slightly.
When you can slowly count to five in between pops of the corn, remove the pot from the heat. Drizzle the melted ghee over the popped corn. Sprinkle nutritional yeast and spirulina-hempseed mix over the popped corn to desired flavor amount. Toss the mixture and place in a bowl to enjoy with your family and friends!
