Here it is!!! When I lived in Costa – I lived on coffee and bananas, but now it’s cacao powder and chai lattes!
I love and embrace change – changing diet or trying something new, going to different countries or simply different parks for adventure, experimenting with new and different sports too – and you guessed it surfing and SUP are the two new sports of choice.
I know I have my work cut out for me so I’m all about my power foods!
These little healthy chocolate babies have been getting rave reviews – BUT making them is sometimes tricky!
TIPS: Since the coconut oil melts you have to keep stirring in the sweetener otherwise you get a bite that is bitter like dark chocolate. Once you have stirred in the sweetener, spread the mix out on the baking paper and give it another quick little swipe around with the spoon to make sure it’s mixed up. The buckwheat groats tend to hold onto the brown rice syrup or honey, but coconut sugar is another great alternative (and it melts right into the coconut oil).
3/4 cup coconut oil or you can use 1/2 cup coconut oil and 1/2 or 1/4 cup cacao butter
1/3 cup cacao powder
2 tablespoons of brown rice syrup or honey – do this to taste, sometimes I add more…
2 pinches of sea salt
1 cup buckwheat groats
1/4 ( or more) cups coconut chips
You may add a drop or 2 of doTERRA peppermint essential oil – it will taste like a peppermint patty!
Mix well, place on baking paper and put in freezer. Break them up when firm and enjoy!
